Oh Martha!

Okay, well, I had to blog tonight about the amazing chocolate pudding cake I made for multiple reasons. 1) Well, obviously, who doesn't want a recipe for warm, chocolate pudding cake; 2) I had this recipe for quite some time and then lost it, found it again, and now figure if I post it on my blog I will never ever lose it again; and 3)I haven't blogged for quite some time and figure this ought to get me off the hook for a while.

And it tastes as good as it looks, oh so rich. And the recipe is quite simple.

Here it is:

Chocolate Pudding Cake Recipe

Ingredients:
1 cup all-purpose flour
2/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
1 cup granulated sugar
3/4 cup whole milk
4 tablespoons unsalted butter, melted and cooled
2 teaspoons pure vanilla extract
3/4 cup firmly packed dark-brown sugar
1 1/2 cups boiling water
3 ounces bittersweet chocolate, broken into small chunks

Directions:
1) Preheat oven to 350° F. In a large bowl, sift together flour, 1/3 cup cocoa powder, baking powder, and salt, set aside.

2) In a medium bowl, whisk together eggs, granulated sugar, milk, butter, and vanilla; add to flour mixture. Stir batter until just combined. Spread batter evenly into an 8 cup shallow baking dish. Set aside.

3) In a medium bowl, whisk together remaining 1/3 cup cocoa powder, brown sugar, and boiling water. Pour liquid evenly over batter, do not mix. Distribute chocolate chunks into batter. Bake until a tooth pick or skewer inserted into the center of the cake comes out with crumbs adhering to it, 30 to 35 minutes. Let cool 10 minutes. Serve warm with vanilla ice cream or whipped cream.

Makes 6 to 8 servings.

I know it seems weird to pour the boiling water mixture over top, but it really works and it is REALLY good. So go on and give it a try, if you love chocolate like I love chocolate, you won't be sorry.

As far as life goes, I am impatiently waiting for this semester to be over with, only one more week and then will be even more impatiently waiting for the next to be over because it is my LAST ONE EVER. EVER!!! I will officially be a Master the first week of July, Master of what . . . I am not sure, but I will be a Master.

Then it will be back to studying stupid stupid auditing. While I am sure most of you already know, I earned THE worst score a person could ever hope for on my last section of the CPA exam . . . a 74. While you might say, 74 isn't so bad, it's better than a 52 or a 36, you would be wrong. 74 is the worst because you need 75 to pass. So, hmmm . . . sorry, but if you could have done 1% better you would have been done, but nope, you now get to study for a good two months and retake this stupid exam for which you will never need this information because you never ever plan on being an auditor anyway, so sorry. The good news is that I can now say (and type) the word 74 without crying (something I could not do for the first 2 days) and I've almost got all of the bad swears out of my head . . . almost. Stupid audit.
